Extent and Type of Work Performed
Piedmont Hospital is located in downtown Atlanta and is over 100 years old. Piedmont Hospital was changing foodservice management, from Morrison’s to self operation; and the time was right to fully renovate the food court. Camacho redesigned four food stations and oversaw the renovation; all within five weeks. The old café was converted into medical space, while the new café was added to service the entire hospital. The new café seats 500 persons and generates 2,500 transactions per day. The new café was designed with several objectives in mind, such as increasing customer flow and capacity, heightening the overall dining experience through environment, customer service, and menu, and creating an efficient design from the standpoint of labor and utility costs.. The menu concepts include Grill, Chef Experience, Deli, Center Stage Salad/Soup Station, Entrée Lite, and Bakery. An associated Coffee Shop serves specialty coffees, meals to go, baked goods, and refreshments. The Café grand opening was January 2008.
Camacho designed a gourmet kitchen for a “higher level” service area of the hospital. The kitchen is able to produce five-star, gourmet foodservice for 25 rooms. The challenge was to design this kitchen within a footprint of 300 square feet. Special equipment systems are in-place, along with key ergonomic friendly features. Camacho also assisted the hospital with a major service conversion; namely traditional trayline to room service. The kitchen was re-tooled with a restaurant style a la cart line-up and a very efficient room service model.
